Nut Chicken Lettuce Wraps with Ginger Garlic Sauce

It’s Peanut Chicken Lettuce Wrap Day!

Which is obviously my best day. Even if it’s a Monday that, in my previous life as a teacher, would have been a holiday, which, in my current life as a blogger, I no longer have as a holiday because I have the strictest boss in the world (–> myself).

My boss is actually so strict that she forces me to eat at least five lettuce wraps for lunch every day. I know. It’s very rough around here sometimes.

I probably don’t even need to tell you that these lettuce wraps are totally my jam right now. From the tasty chicken, peanut and rice noodle filling to the crunchy and beautiful peanut and coriander fillings to the barely tart sauce that goes over the top, and directly into the fresh and delicate lettuce leaves that will then transport the boat overflowing with delights in your mouth

These lettuce wraps are a little different, though, because HEY RICE NOODLES.

That’s right – I just added rice noodles to my lettuce wraps. What are you going to do about it?

It all started because I was bringing them to a friend’s house for an aperitif dinner (by the way, when was the last time you had an aperitif dinner? this is the best thing ever and you have to make it happen. as soon as possible.) and I realized before I even got there that I was going to be sad after eating these lettuce wraps as an appetizer.

 

Because I have this thing: I am constantly plagued by the dilemma I am still hungry every time I eat lettuce wraps. Ugh. Like, I have two bites of stuffing and then somehow they’re gone and I still need more food. What-what-what-what is it? Black magic, I tell you.

Being firm in my judgment about food, I can no longer morally support any kind of skimpy, non-filling lettuce envelopes. So naturally, I made appropriately sized lettuce wraps for the little giants. Filled with chicken, peanuts and rice noodles (my favorite!) and intended to be consumed as a MEAL. None of this two-bite stuff, my friends. Thanks, but no thanks.

Please listen to me when I say that these are as simple as they are delicious. I mean like 20 simple minutes. It’s totally a Monday and WE CAN TOTALLY DO THIS.

First step: The sauce. The best things in life always start with the sauce.

Step Two: Marinate the chicken and peanuts. For, as,.37 seconds because we have hungover people in the house.

Step Three: Brown the chicken, peanuts and rice noodles. There they are, those sneaky rice noodles.

Step Four: Wrap, sprinkle, drizzle with sauce and DEVOUR WITH HAPPINESS.
