Tomato Butter Sauce with Garlic Basil Chicken

Let me introduce you to what could be my new favorite way to eat chicken? It’s that beauty up there, the one coated in the fresh buttery tomato sauce from the garden with a few summer basil leaves and the aroma of freshly minced garlic. Yes, that’s how I eat chicken.

To be honest, I always feel a little hypocritical when posting chicken recipes, because you already know how I really feel – most of the time I’m only average on this very regular white meat that is supposed to be everyone’s favorite thing. But I guess that means that when I post chicken recipes, you chicken kindred spirits can join me in knowing that there are at least a few good ways to make chicken that do exist in the universe. Where are my kindred chicken-meh spirits?

On the other hand, this summer I *think* I might have officially joined the ranks of People Who Garden without any related associations-more out of pure determination and a lot of luck.

And my entry into the club really depends on whether you can count the plants that were bought in a grocery store and/or the plants that have shriveled up and died completely since they have been in your care. It also depends on whether your definition of the garden has a cut quantity, because we are working with about (count them) 1-2-3-4-5 unique plants this summer.

Okay, the tomatoes in these last photos are actually not from my garden, but they ARE from my neighbor’s garden and they are the ones I used for this recipe. My own Roma babies are still, well, honestly, I can’t bring myself to choose them yet. Beginner problems.

If you are the neighborhood gardener who leaves drops of perfectly ripe produce for the garden on your neighbors’ doorstep, I want to tell you about moving into my hood. We live in a great neighborhood with a lot of charm, adorab-well, I’ll stop. You don’t have to move here.

But that’s really how I got my tomatoes last week – the drop-off at the neighbor’s door- and those tomatoes made me this dinner that made me love chicken for one night. That’s a big neighborly love right there.

It is also a great love for butter.
